Crispy Chicken Lollipop
Ingredients
10 (880g) Chicken Drumsticks
Salt & Pepper to taste
2 Tbsp Soy Sauce
4 Tsp Ginger-Garlic Paste
¼ Cup Flour
⅛ Cup Cornflour
3 Tbsp Chilli Paste
Water as required
Oil, for frying
Steps
Step 1
Place the drumstick on a cutting board and cut flesh from the top of the joint. Scrape down the flesh to the bottom of the drumstick using a sharp knife such that the bone is clean and you have a perfect chicken lollipop. Repeat with all the drumsticks.
Step 2
Transfer the lollipops to a large bowl, add salt, pepper, soy sauce and 2 tsp ginger-garlic paste. Mix well and rest for 15 minutes.
Step 3
In the meantime, add flour, cornflour, 2 tsp ginger-garlic paste, salt, pepper, chilli paste and water in another bowl. Mix well to form a thick batter. Add more water if required.
Step 4
In a deep pan, heat oil over medium-high heat for frying.
Step 5
Next, dip the chicken lollipops one-by-one into the batter and lower into the hot oil. Cook in batches for 7-8 minutes until golden brown. Take out the lollipops out of the oil for 10 seconds and return to the hot oil to cook for a further 3-4 minutes until crispy. Repeat with remaining lollipops.
Step 6
Once cooked, drain on a paper towel.
Step 7
Transfer to a serving platter and serve hot with sweet chilli sauce.
